From chewy sweet potato donuts (anytime dessert) to meatballs in sweet soya sauce (best side with rice) and a really spicy assam coconut chicken (great as a main), there something for every stomach this Aidilfitri. Sweet potato shines through, without being overpowering. When baking, it’s a sticky, but neat batter that you should get. Round first into balls, then use your knuckle for the easiest donut hole. Finally, this one’s something we found out -go easy on the sugar, because the sweet potato’s already taken care of that.

2. Deep Fried Fish in Sweet Soy Sauce

Red snapper is best for thishot fried sweet soya dish. Work quickly as you chop up fresh garlic, ginger, and turmeric for its sweet-hot-sticky sauce. Then straight into a wok or pot it goes, and make sure the oil is hot enough for deep-frying or the fish might turn out stale and soggy. Seabass and mackerel works well too, and if you want it even simpler, use fish slices instead, your guests will appreciate a no-fuss fish.

3. Vegetable Tofu Spring Roll

Delicious-tasting and quickly eaten, these are paper-thin crispy spring rolls lined with vegetable slices and tofu. Sesame oil is quickly flicked over before rolling and frying, and that makes all the difference. And since they’re so easy to pack and bring around, consider making a few containers of these for all those visits.

4. Meatballs in Sweet Soy Sauce

mmmHmMmmm. It’s time for some very, very good meatballs. You’ll need minced beef, some curry powder, kicap manis, or sweet soy sauce, together with two licorice tasting spice of star anise. Once that’s stirred up, all you need to eat is a fork and good aim. Or for the hungry, a big spoon serves three or four delicious meatballs at once.

5. Spicy Assam Coconut Chicken (Ayam Percik)

This chicken's got sweetness, spice, and a rich creamy taste. Ayam Percik, as it’s commonly known is chicken coated in a sticky creamy mix of assam, coconut milk, shallots, lemongrass, and chilies. You’ll have to blend until smooth and let it rest all over chicken thighs. Make more, because it’s an appetite opener, and a guaranteed crowd favourite. 

6. Turmeric Ginger Fish

Succulent snapper slices on a bed of lip-smacking rempah, or highly seasoned blend of shallots, chili padi, turmeric, ginger and sweet tamarind paste. First you blend, then marinade, and the fish is cooked last, always. Don’t overcook this, or you’ll be biting into super tough flesh.

This light ice coconut dessertis easy to put together and even easier to eat. All you need is to slice quickly jackfruit, coconut flesh and cube up avocado for a sweet, smooth finish. For chewy bits, drop in some nata de coco. Because after rounds of heavy eating, everyone will be grateful for something this simple.
