Fish Fillet with Olive Tapenade

Tapenade is a type of spread that is commonly found in France. Made of olives, capers and anchovies, it is usually eaten on a slice of toasted bread as an appetizer or sometimes, used as a stuffing for chicken. In this recipe by Richard Gomez, the olive tapenade will be served as a topping for his fried fish fillet. 

To make the tapenade, you have to first toast the anchovies and the tomatoes before blending them with black olives, green olives, capers, bell peppers, garlic and onions. Recommended for sauces and dips, Doña Elena Extra Virgin Olive Oil is added along with lemon zest and lemon juice to elevate the dish with fresh flavors.

As for the fish, it is simply coated with a flavorful breading that has been seasoned with black pepper, garlic powder, oregano, and even paprika and cayenne pepper for a touch of heat. Hummus Dip

Another banger by Richard Gomez, this creamy Hummus Dip is super easy to make. Made mainly of garbanzos, or chickpeas, this well-loved Middle Eastern dish is rich in protein and is usually eaten as a dip with pita bread. 

For a hummus that’s smoother in texture, it’s recommended that you remove the skin of the chickpeas while washing them. Once ready, all you need to do is to blend them with tahini, garlic and Extra Virgin Olive Oil. Season to taste with salt, lemon juice and black pepper before blending the mixture again to your desired consistency. Add water if need be, to make it less thick, and more creamy.

Serve with an extra drizzle of Extra Virgin Olive Oil, a sprinkle of paprika, and green olives for a light dinner or lunch time snack. While it is commonly eaten with pita bread, you can also dip your favorite crackers or roasted vegetables in it. Feel free to add chili flakes for a spicier kick.
